Americans eat, on average, 192 lbs. of flour and cereal products per year. Most of that (134 lbs.) is wheat flour. That flour is eaten in the form of bread (53 lbs.), rolls, tortillas, and ready-to-eat cereals. The most popular grains are first wheat, then oats, then rice, at least for Americans.

If grain is stored in a water tight, moisture proof container, away from light and heat it can easily store for decades loosing nutrients slowly over that period. Weavils and rodents are potential threats to stored grain. If you buy grain from a reputable source you will assume your purchase does not include the ugly weavils but not all grain sellers are equally careful. Store grain only when adequately dried. Store it is a cool place. Use a container that will not allow entry of moisture or pests and the grain can be safely stored for years.

Storing ground flour will greatly shorten the life of the grain. Without refrigeration, flour may expect to store only 6-8 months in normal conditions. In an air-tight container you might expect to extend the life a couple of extra months.
